Watercress and Green Beans with Lime Vinaigrette

Ingredients

  • 1 bunch watercress
  • 1 shallot
  • ¼ pound green beans
  • Bottle of red wine vinaigrette
  • 1/8 cup toasted pine nuts
  • 2 teaspoons lime zest

Wash and dry watercress. Thinly slice shallot. Trim green beans and blanch in boiling water until crisp-tender, 4 to 5 minutes. Drain and plunge into ice water.
