Wheat Berry Salad with Bacon

  • Kosher salt and pepper
  • ½ cup fresh flat-leaf parsley
  • 1 cup wheat berries
  • 2 tablespoons extra-virgin olive oil
  • ½ cup dried cherries
  • ½ cup pecan halves (about 2 ounces)
  • 2 tablespoons fresh lemon juice
  • + 2 more ingredients
    • 6 slices bacon
    • 2 shallots, thinly sliced

In a large saucepan, combine the wheat berries, 4 quarts water, and 1 teaspoon salt and bring to a boil. Cook until tender but still slightly chewy, about 1 hour. Drain and rinse under cold water. Transfer to a large bowl.
