Whipped Sweet Potatoes with Nutmeg and Lemon


  • 3 tablespoons unsulfured molasses
  • grated lemon peel
  • Ground nutmeg
  • 5 pounds deep orange sweet potatoes
  • 2 teaspoons grated lemon peel
  • 8 tablespoons butter
  • 1 ½ teaspoons ground nutmeg
  • + 3 more ingredients
    • pepper
    • fresh parsley
    • Salt

Cook sweet potatoes in large pot of boiling salted water until tender, about 15 minutes. Drain well. Transfer to large bowl and puree in mixer or processor in batches. Return to pot.
