White Bean Purée with Sun-Dried Tomatoes

Ingredients

  • pita triangles
  • 1 tablespoon fresh rosemary leaves
  • 2 tablespoons parsley
  • 1 ½ teaspoons fresh lemon juice
  • 1 cup dried Great Northern beans
  • 1 ½ tablespoons shallots
  • 1 cup oil-packed sun-dried tomatoes
  • + 9 more ingredients
    • 2 4-inch-long fresh rosemary sprigs
    • ½ cup water
    • 4 cups water
    • ¾ teaspoon ground black pepper
    • ¼ teaspoon red pepper
    • 1 ½ teaspoons salt
    • Lemon wedges
    • ½ small onion
    • 4 tablespoons extra-virgin olive oil

Place beans in medium saucepan. Add enough cold water to cover beans by 3 inches. Let stand overnight. Drain beans well. Return to saucepan. Add 4 cups water, onion, and rosemary sprigs.
