White Bean Soup with Chile Paste

Ingredients

  • 2 cups dried Great Northern beans
  • 1 dried chile de rbol
  • 2 teaspoons ground coriander
  • 1 large carrot
  • 8 cups water
  • ½ cup whipping cream
  • 2 dried ancho chiles
  • + 8 more ingredients
    • 1 ½ cups water
    • 1 large garlic clove
    • 2 tablespoons butter
    • 1 tablespoon dark brown sugar
    • 1 large white onion
    • 3 tablespoons vegetable oil
    • 2 ½ teaspoons ground cumin
    • 2 celery stalks

Place chiles in bowl; add enough water to cover. Let stand at room temperature overnight. Drain.
