White Pepper Crème Brûlée with Fig and Prune Compote

Ingredients

  • ¾ cup dried pitted prunes
  • 2 cups apple juice
  • 1 5-inch piece vanilla bean
  • 8 large egg yolks
  • 1/3 cup half and half
  • 9 teaspoons raw sugar crystals
  • ½ cup sugar
  • + 4 more ingredients
    • ½ teaspoon grated orange peel
    • 2 1/3 cups whipping cream
    • ¾ cup dried Calimyrna figs
    • ½ teaspoon ground white pepper

Combine all ingredients in heavy medium saucepan. Bring to boil, stirring occasionally. Reduce heat to medium-low and simmer gently until figs and prunes are soft, about 10 minutes.
