Ingredients

  • 1 ¼ cups King Arthur White Whole Wheat Flour or King Arthur Premium Whole Wheat Flour
  • pinch (about 1/16 teaspoon) instant yeast
  • 1 cup King Arthur White Whole Wheat Flour or Premium Whole Wheat Flour
  • ½ cup cool water
  • pinch (about 1/16 teaspoon) instant yeast
  • all of the starter (above)
  • ¾ cup + 2 tablespoons lukewarm water
  • + 13 more ingredients
    • ¼ cup room temperature orange juice*
    • 2 ¼ cups King Arthur Unbleached Bread Flour
    • 1 ½ teaspoons salt
    • ¼ teaspoon instant yeast
    • 1 cup King Arthur White Whole Wheat Flour or Premium Whole Wheat Flour
    • ½ cup cool water
    • all of the starter (above)
    • ¾ cup + 2 tablespoons lukewarm water
    • ¼ cup room temperature orange juice*
    • 1 ¼ cups King Arthur White Whole Wheat Flour or King Arthur Premium Whole Wheat Flour
    • 2 ¼ cups King Arthur Unbleached Bread Flour
    • 1 ½ teaspoons salt
    • ¼ teaspoon instant yeast

1) To prepare the starter: Mix the starter ingredients in a small (2- to 3-cup) bowl, cover the bowl, and let rest overnight at room temperature.
