Whole wheat banana bread muffins with apples and pecans

Ingredients

  • 1/3 cup pecans, chopped
  • carameal sauce or
  • Topping (OPTIONAL):
  • ½ cups chopped pecans, lightly toasted
  • 1 and ½ cups apples, cored and chopped. Use sweeter and crisper apples, such as Fuji apples, especially if using ¾ cup sugar.
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • + 9 more ingredients
    • 1 teaspoon baking soda
    • 1 and ½ cups sifted white whole wheat flour, I am using Prairie Gold: Flour 100% Whole Wheat by Wheat Montana
    • 1 teaspoon vanilla extract
    • ½ cup Greek yogurt
    • 2 very ripe bananas, mashed
    • 1 egg
    • 5 tablespoons unsalted butter, very soft, room temperature
    • ¾ to 1 cup sugar
    • Muffins:

Preheat oven to 350 degrees. In a mixing bowl, using electric mixer, beat sugar and butter on high speed for 1.5 minutes. The consistency will be somewhat crumbly.
