Whole Wheat Brioche Buns

Ingredients

  • 1 ¼ cups (190 grams / 6.7 ounces) bread flour
  • 6 tablespoons (85 grams / 3 ounces) butter, melted but not hot
  • 2 eggs room temperature, separated
  • 1 cup (150 grams / 5.3 ounces) whole-wheat flour
  • 2 ½ teaspoons (7 grams / .25 ounces) dry active yeast
  • 3 tablespoons honey
  • ½ cup whole milk, warmed
