Whole-Wheat Burger Buns


  • Cornmeal, for sprinkling
  • 1 ¾ cups (approximately) unbleached all-purpose flour
  • 1 ¾ cups whole-wheat flour
  • 1 tablespoon extra-virgin olive oil, or canola oil
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 1 large egg, at room temperature (see Cooking tip), lightly beaten
  • + 3 more ingredients
    • 1 package active dry yeast
    • 1/3 cup lukewarm water
    • 1 cup low-fat milk
