  • ¾ cup Madeira
  • ¾ cup whipping cream
  • 6 tablespoons butter
  • 6 garlic cloves
  • 2 tablespoons fresh thyme
  • fresh chives
  • 8 large shallots
  • + 2 more ingredients
    • 2 pounds fresh wild mushrooms (such as stemmed shiitake, crimini, and oyster)
    • 1 7.25-ounce jar roasted peeled whole chestnuts
