  • 1/3 cup wild rice
  • 1 1/3 cups short-grain brown rice
  • ½ cup coarsely grated low-fat mozzarella cheese
  • 6 cups vegetable stock or broth
  • 3 tablespoons extra-virgin olive oil

    • 1 cup onion
    • 1/3 cup plain dry breadcrumbs
    • ¼ cup Parmesan cheese, freshly grated
