Wild Rice and Cucumber Salad


  • ½ cup(s) parsley leaves, coarsely chopped
  • 1 seedless cucumber, peeled and coarsely chopped
  • 1 cup(s) brown rice
  • zest from 1 large orange
  • 2/3 cup(s) freshly squeezed orange juice
  • 1 shallot, chopped fine
  • 1 bunch(s) green onions, chopped fine
  • + 8 more ingredients
    • 2 tablespoon(s) red wine vinegar
    • ½ cup(s) extra virgin olive oil
    • kosher salt to taste
    • freshly ground black pepper to taste
    • 1 large sweet red pepper, chopped
    • 2/3 cup(s) dried cranberries
    • additional salt and pepper, as desired
    • 1 cup(s) wild rice
