Wild Rice and Walnut Pilaf
Ingredients
- ¼ cup finely chopped onion
- 2 ½ cups water
- 1 teaspoon olive oil
- 2 tablespoons chopped walnuts, toasted
- 1 teaspoon butter
- 1 tablespoon chopped fresh chives
- 1 tablespoon fresh lemon juice

- ½ teaspoon salt, divided
- ¾ cup long-grain brown and wild rice blend (such as Lundberg's)
Melt butter in a small saucepan over medium heat. Add onion; cook 3 minutes, stirring frequently. Stir in water, rice, and 1/4 teaspoon salt; bring to a boil.
