Winter Salad with Roasted Beets and Citrus Reduction Dressing

Ingredients

  • ¼ cup extra-virgin olive oil
  • ½ teaspoon sugar
  • Cooking spray
  • ¾ teaspoon kosher salt, divided
  • ¾ cup fresh orange juice (about 4 oranges)
  • 2 tablespoons white wine vinegar
  • ½ teaspoon freshly ground black pepper
  • + 6 more ingredients
    • 4 cups torn Boston lettuce
    • 2 cups torn radicchio
    • 2 cups trimmed watercress
    • 1 tablespoon minced shallots
    • 4 medium beets (red and golden)
    • ½ cup (2 ounces) crumbled goat cheese
