Yellow Rice with Sofrito

Ingredients

  • 1 tablespoon onion
  • ½ teaspoon salt
  • 1 ½ cups water
  • ¾ cup long-grain rice
  • ¼ teaspoon turmeric
  • 2 teaspoons olive oil
  • 1 small garlic clove
  • + 2 more ingredients
    • 1 tablespoon fresh coriander sprigs
    • 1 tablespoon red or green bell pepper
