Yellow Tomatoes Stuffed with Grilled Wild Mushrooms and Parmesan Cheese

Ingredients

  • ¼ cup fresh grated Parmesan cheese
  • Sweet Shallot Vinaigrette
  • 2 tablespoons olive oil
  • 1 tablespoon shallots
  • 1 cup oyster, shiitake, or portobello mushrooms
  • ¼ teaspoon fresh rosemary
  • 4 yellow (or red) medium-size beefsteak tomatoes
  • + 2 more ingredients
    • 1 handful mixed baby greens
    • ¼ teaspoon fresh thyme
