  • ½ cup sugar
  • 3 strips orange peel (orange part only; each about 1/2 in. wide and 2 to 3 in. long)
  • 2 teaspoons unflavored gelatin (a 1 1/4-oz. envelope)
  • 2 cups whipping cream
  • 1 2/3 cups plain yogurt (see notes)
  • 1 vanilla bean, split lengthwise, or 1 teaspoon vanilla extract
  • About ½ teaspoon salad oil
