Ingredients

  • Streusel topping:
  • 2/3 cups pecans, almonds or walnuts, finely chopped
  • 2 tablespoons unsalted butter, melted
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon

    • 1 cup plain low-fat yogurt
    • 4 tablespoons (1/2 stick) unsalted butter, melted and cooled
    • 1/3 cup packed light brown sugar
    • 1 teaspoon cinnamon
    • 2/3 cup sugar
    • 1 teaspoon baking powder
    • 2 large eggs
    • ½ teaspoon salt
    • Muffins:

Make streusel topping: In a small bowl, combine streusel ingredients and pinch together into large crumbs. Place bowl in freezer. Make muffins: Preheat oven to 375°F.
