Yukon Gold Potatoes Sautéed in Clarified Butter

Ingredients

  • ½ teaspoon salt
  • 1 garlic clove, minced
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup Clarified Butter
  • 3 pounds Yukon gold potatoes, peeled and cut into 1 1/2-inch pieces
  • 2 tablespoons chopped fresh flat-leaf parsley

Place potatoes in a saucepan; cover with water. Bring to a boil. Reduce heat; simmer 2 minutes. Drain and let stand for 2 minutes.
