Zesty Potato-Ham Casserole

Ingredients

• Additional fresh thyme leaves (optional)
• 1 medium green bell pepper, chopped (about 1 cup)
• 1 olive oil
• 2 ½ cup(s) cubed leftover Cook's® Bone-in Ham (½-inch cubes)
• 1 ½ teaspoon(s) ground black pepper
• 2 shredded sharp Cheddar cheese
• 1 medium tomato, seeded, chopped
• + 4 more ingredients
• • 4 chopped fresh thyme
  • 8 medium potatoes, peeled, cut into ½-inch cubes (about 6-½ cups)
  • 1 medium onion, chopped (about ½ cup)
  • 1 ½ tablespoon(s) olive oil
