Ingredients

  • About 4 cups vegetable oil
  • 1 medium onion
  • 4 cups water
  • 2 tablespoons cilantro
  • 1 teaspoon clove garlic
  • 2 ¼ cups bulgur
  • 2 tablespoons extra-virgin olive oil

    • 2 garlic cloves
    • ½ cup plain fine dry bread crumbs
    • ½ teaspoon ground coriander
    • 1 pound zucchini
    • 2 cloves garlic
    • 2 tablespoons unsalted butter
    • 1/3 cup slivered almonds
    • ½ cup fresh flat-leaf parsley leaves
    • 1 pound medium beets with greens
    • ½ cup packed cilantro sprigs
    • 1 cup plain yogurt (preferably Greek)
    • ¾ teaspoon ground cumin

Coarsely grate zucchini in a food processor fitted with the medium shredding disk. Toss with 1 teaspoon salt in a colander. Let stand 10 minutes.
