Zucchini, Parmesan, And Mâche Salad

Ingredients
- ¼ cup shaved Parmigiano- Reggiano cheese
- 2 tablespoons olive oil
- 1 (3 1/2-ounce) container mâche
- 2 medium zucchini, thinly sliced
- ½ teaspoon kosher salt
- 1 tablespoon fresh lemon juice (about 1 small lemon)
- ¼ teaspoon freshly ground black pepper
- + 1 more ingredients

- ½ teaspoon grated fresh lemon rind
Combine first 7 ingredients in a large bowl, and toss. Let stand at room temperature 15 minutes. . Add mâche, and toss well to coat. Serve immediately.
