Ingredients

  • ½ pound plum tomatoes
  • 6 ½ tablespoons olive oil
  • 1 ½ pounds zucchini
  • 1/3 cup long-grain white rice
  • 1 teaspoon thyme
  • 2 large eggs
  • 3 garlic cloves
  • + 2 more ingredients
    • ½ cup grated Parmigiano-Reggiano
    • 1 medium onion

Preheat oven to 450°F with racks in upper and lower thirds. Cook rice according to package instructions.
