Roast Beef Recipes

The one dish that pops to mind when I think of roast beef is prime rib. It is interesting how different the flavors of a slow-roasted prime rib are from those of a grilled rib eye steak. Roasting meat tends to concentrate the flavors of meat while allowing for a gradual and even distribution of fat. The results are silky textures and intense beef flavors.

Whether with a prime rib eye of round or rump roast, the common theme of soft texture and intense beef flavors are the hallmarks of roast beef. The wine you choose to pair with your roast beef should mirror these characteristics as best as possible. The texture calls for a mature wine or one with naturally moderate tannins, such as Zinfandel, Italy’s Negroamaro, or Grenache. I mention these three wines in particular because they are all also fairly richly flavored, as is roast beef.

When blended with Syrah and Mourvedre, as is this case in Chateauneuf-du-Pape and many Rhone blends, Grenache has all of the characteristics needed to make for a successful pairing with roast beef. The Grenache is soft and fruity, the Syrah is higher in the acid needed to balance the fat and often rich with savory and peppery notes, and the Mourvedre brings tannin and gaminess into the blend. Put together, it is almost an ideal pairing for many roast beef dishes.

Beef at its essence is particularly red wine friendly, so when its flavors are concentrated, it can be paired with almost any wine. That concentration of flavor and retention of juicy fat makes it particularly well suited to pairing with younger wines that may seem a bit too assertive on their own. If you want to try a young bottle of Bordeaux, for example, an intense roast beef preparation might be the perfect time. Roast beef is a red wine lover’s best partner for exploring young red wines, so don’t be shy. Get out there and explore some of the biggest, boldest wines available, like Aglianico from Italy, Mourvedre, and the increasingly popular red blends of Portugal. Your roast beef will help to temper the tannins and give you a glimpse of what each of these wines might develop into with additional bottle aging.
