CATFISH STEW FOR A CROWD

Ingredients

  • 1 pound(s) fatback
  • Salt and pepper to taste
  • 5 pound(s) Irish potatoes, cut into chunks
  • 5 pound(s) onions, diced
  • 25 pound(s) catfish

In a large cooking pot, fry fat back until brown. Cut fish into small portions. Add one layer of fish to fatback, then onions, then potatoes. Repeat process until all ingredients are in the pot.
