Cod in Tarragon Tomato Broth
Ingredients
- 3 Tbs. olive oil
- 1 large shallot, finely chopped
- Salt and freshly ground black pepper to taste
- 2 cod fillets, about 6 oz. each
- ¼ cup dry white wine
- ½ cup homemade or low-salt canned chicken or fish stock
- 1 Tbs. chopped fresh tarragon
- + 2 more ingredients

- 4 plum tomatoes, peeled, seeded, and chopped (canned is fine: see Substituting canned tomatoes for fresh)
- 1 clove garlic, minced
