Cod in Tarragon Tomato Broth

  • 1 Tbs. chopped fresh tarragon
  • 1 large shallot, finely chopped
  • ½ cup homemade or low-salt canned chicken or fish stock
  • 3 Tbs. olive oil
  • 1 clove garlic, minced
  • 2 cod fillets, about 6 oz. each
  • ¼ cup dry white wine
  • + 2 more ingredients
    • Salt and freshly ground black pepper to taste
    • 4 plum tomatoes, peeled, seeded, and chopped (canned is fine: see Substituting canned tomatoes for fresh)
