Ingredients

  • ¼ cup plus 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ¼ cup plus 2 tablespoons olive oil
  • ½ cup dry bread crumbs
  • Grated zest of 1 lemon
  • Salt
  • 2 pounds orange-roughy fillets, cut to make 4 pieces

1. Heat the oven to 400°. Season the orange-roughy fillets with 1/4 teaspoon of salt and 1/8 teaspoon of pepper.
