  • ¼ cup heavy cream
  • Pinch saffron
  • 4 sprigs fresh thyme
  • 1/3 cup vermouth
  • Salt and freshly ground black pepper
  • 2 (6 to 8-ounce) fillets sea bass, skin on
  • 2 tablespoons butter, divided
