Penne with Halibut, Zucchini, and Mint

Ingredients

  • 1 onion (8 oz.), peeled and chopped
  • ½ cup dry white wine
  • 5 tablespoons olive oil
  • 1 ½ pounds boned, skinned halibut pieces
  • About 1 teaspoon kosher salt
  • 1 teaspoon grated lemon peel
  • ½ cup slivered fresh mint leaves
  • + 3 more ingredients

    • 1 ½ pounds zucchini, rinsed and chopped
    • 12 ounces dried penne pasta

1. Pour 3 tablespoons olive oil into a 10- to 12-inch frying pan over medium heat. Add onion and stir often until soft, 6 to 8 minutes.
