Spanish Braised Monkfish Recipe


  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 red bell peppers, diced
  • 1 ½ teaspoons salt
  • 3 cloves garlic, minced
  • 1/3 cup dry sherry
  • 1 cup bottled clam juice

    • 2 pounds monkfish, membranes removed, fish cut to make 4 pieces
