Spanish Fish with Onion Sauce Recipe - Pescado Frito con Salsa de Cebolla


  • ½½ cup olive oil
  • 1 whole bay leaf
  • 1/3 cup red wine vinegar
  • flour for breading fish
  • 2 medium yellow onions, chopped into ¼- inch chunks
  • 2 lbs red snapper fillets or other white fish (see above)
  • salt and pepper to taste

Rinse fish and pat dry with a paper towel. Cover a large dinner plate with flour about ½ inch deep.
