Twice Fried Fish

Ingredients

  • 1 tablespoon hoisin sauce
  • 1 tablespoon canned tomato sauce
  • 1 tablespoon dry sherry
  • 1 teaspoon ground black pepper
  • 2 tablespoons dark soy sauce
  • 1 teaspoon white sugar
  • 1 teaspoon salt
  • + 5 more ingredients
    • 1 ½ pounds cod fillets
    • 3 tablespoons vegetable oil
    • 1 tablespoon lard
    • 1 teaspoon cornstarch
    • 4 tablespoons water

1. In a mixing bowl, mix together hoisin sauce, tomato sauce, sherry, pepper, soy sauce, sugar and salt. Set aside for 20 minutes. 2. Rub cod filets with 1 tablespoon of oil.
