Grilled Halibut and Fresh Mango Salsa

Ingredients

  • 2 cloves garlic, minced
  • 2 cups plum tomatoes, seeded and diced
  • 1 teaspoon sugar
  • 1 tablespoon cider vinegar
  • 1 teaspoon black pepper, divided
  • 1 teaspoon salt, divided
  • ½ cup diced onion
  • + 5 more ingredients
    • 2 tablespoons fresh lime juice
    • ½ cup chopped fresh cilantro
    • 1 ½ cups diced peeled ripe mango
    • 1 tablespoon olive oil
    • 4 (6-ounce) halibut fillets

Prepare grill. Combine first 7 ingredients. Stir in 1/2 teaspoon salt, 1/2 teaspoon pepper, and garlic. Rub halibut with oil; sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper.
