Ingredients

  • 2 fresh Thai or serrano chiles (2 to 3 inches long)
  • 6 1- to 1 1/2-inch-thick pieces mahimahi fillet with skin (6 oz each)
  • 3 tablespoons vegetable oil
  • 1/3 cup fresh cilantro
  • ¼ teaspoon salt
  • 1 teaspoon sugar
  • 1 ½ tablespoons Asian fish sauce
  • + 3 more ingredients
    • ¾ pineapple (preferably not labeled "super sweet")
    • 3 ounces shallots
    • 2 garlic cloves

Cook garlic and shallots in 2 tablespoons oil in a 12-inch heavy skillet over moderate heat, stirring, until softened, 3 to 5 minutes.
