GRILLED ORANGE ROUGHY

Ingredients

  • 2 tbsp. chopped chives
  • 2 tbsp. olive oil
  • 1/8 tsp. white pepper
  • 1/8 tsp. salt
  • 2 cloves garlic, minced
  • 1 tbsp. Dijon mustard
  • ¼ c. lemon juice
  • + 1 more ingredients
    • 4 to 6 orange roughy fillets

Combine lemon juice, mustard, garlic, salt and pepper. Whisk in oil. Marinate fish 30 minutes. Drain and reserve marinade. Grill or broil 5 to 6 minutes per side. In the meantime, simmer marinade to 1/2. Serve over fish. Sprinkle with chives.
