Ingredients

  • 1 1-inch-thick swordfish steak
  • 1 teaspoon ground coriander
  • 1 tablespoon fresh cilantro
  • 1 teaspoon vegetable oil
  • 1 teaspoon honey
  • 1 tablespoon scallion greens
  • additional oil for brushing pan

    • 1 well-seasoned ridged grill pan
    • 1 1/4-pound Kirby cucumber
    • 1 tablespoon fresh lime juice
    • 1 lime
    • ¼ teaspoon salt
    • 1 teaspoon sugar
    • 1 teaspoon fresh jalapeño or serrano chile (including seeds)
