Ingredients

  • 6 1-inch-thick pieces skinless sturgeon fillet or halibut fillet with skin (6 oz each)
  • 1/8 teaspoon cayenne
  • 1 electric coffee/spice grinder
  • ¼ teaspoon black pepper
  • ½ teaspoon fresh lemon zest
  • 3 tablespoons fresh mint
  • 1 teaspoon fennel seeds
  • + 7 more ingredients
    • 1 teaspoon fresh ginger
    • ½ teaspoon ground cumin
    • ½ teaspoon ground coriander
    • 2 cups plain yogurt
    • 1 teaspoon salt
    • ¼ teaspoon turmeric
    • 1 garlic clove

Finely grind fennel seeds in grinder. Whisk together fennel and 1 cup yogurt with garlic, ginger, cumin, coriander, black pepper, turmeric, cayenne, and 1/2 teaspoon salt.
