Lobster and Mango Cocktail

Ingredients

  • 2 tablespoons Cognac
  • 3 firm-ripe mangoes
  • 1/3 cup mayonnaise
  • 1 cup celery
  • 1 tablespoon fresh lemon juice
  • 4 1 1/2-pound live lobsters
  • 4 whole Belgian endives

    • 3 tablespoons fresh chives
    • 1 tablespoon ketchup
    • 24 whole chives
    • 1/3 cup plain yogurt
