Lobster Mushroom Salad

Ingredients

• 16 ounce(s) imitation crab
• 2 ounce(s) arugula or mizuna
• 5 ounce(s) spring greens
• 5 to 6 lobster mushrooms (or similar firm mushrooms), cut into bite sized pieces
• salt and pepper to taste
• ¾ cup(s) canola oil
• ¼ cup(s) fresh lemon juice
• + 4 more ingredients
• • 2 teaspoon(s) minced garlic
  • 1 tablespoon(s) fresh basil, chopped
  • 2 tablespoon(s) fresh parsley, chopped
  • 4 vine ripened or Roma tomatoes, seeded and finely chopped
