  • ¼ cup Shallots or Yellow Onion, finely diced

    • 3 + 1 tablespoons unsalted Butter
    • 3 tablespoons Canola Oil
    • Large pinch of Saffron threads
    • 2 ½ cups/16 ounces Arborio Rice
    • ¼ cup Parmesan Cheese, grated
