Lobster Tacos

Ingredients

  • 20 (6 inch) corn tortillas
  • ¼ cup cooking oil
  • ½ cup chopped red onion
  • 2 minced garlic cloves
  • 1 teaspoon jalapeno pepper (seeded and chopped)
  • 1 ½ cups cooked lobster meat
  • 1 mango (pitted, peeled and finely diced)

    • 2 tablespoons fresh cilantro (finely snipped)
    • ¼ teaspoon salt
    • 1/8 teaspoon black pepper
