Lobster Vinaigrette


  • 1 pound(s) Boiled Lobster Meat
  • ½ cup(s) olive oil
  • 1/3 cup(s) white vinegar
  • 1 teaspoon(s) Salt
  • 1 onion, peeled and chopped
  • 1 teaspoon(s) Freshly Ground Green or White Pepper
  • 4 hard boiled eggs, chopped

Warm lobster meat in salted water for about 5 minutes and take aside to cool, cut in chunks when cooled. Mix the rest of the ingredients to make a sauce. Chill and serve. Shrimp may substituted for the lobster.
