Lobster With Roasted Sweet Corn Rémoulade


  • 1 ½ tablespoons chopped fresh parsley
  • 2 (8-ounce) fresh or frozen lobster tails, thawed
  • Cooking spray
  • ¼ cup light mayonnaise
  • 2 cups fresh yellow corn, cut from cob (3 large ears)
  • 1/8 teaspoon freshly ground pepper
  • 4 small French rolls (such as Earth Grains)

    • 8 cups water
    • 1/8 teaspoon salt
    • 2 tablespoons Creole mustard
    • 3 tablespoons crawfish, shrimp, and crab boil (such as Zatarain's)
