Ingredients

  • 5 bacon slices
  • 1/8 teaspoon cayenne
  • 2 ½ cups whole milk
  • 2 boiling potatoes
  • ½ pound sea scallops, quartered and tough muscle removed from side of each
  • ½ cup shallots
  • 2 tablespoons fresh cilantro
  • + 5 more ingredients
    • ½ pound shelled cooked lobster meat or 1/2 lb lump crabmeat
    • 2 tablespoons fresh chives
    • ¾ cup bottled clam juice
    • 1 teaspoon salt
    • ¼ pound shrimp, shelled, deveined

Cook bacon in a 5-quart heavy pot over moderate heat, stirring occasionally, until crisp, about 5 minutes. Transfer bacon with a slotted spoon to paper towels to drain.
