Michael Smith's Favourite Maritime Seafood Chowder

Ingredients

  • 2 cans (each 5 oz/142 g) whole baby clams
  • 8 slices bacon , chopped
  • 1 onion , chopped
  • 2 ribs celery , diced
  • 1 cup grated peeled baking potato
  • 1 cup whipping cream , (35%)
  • 1 cup milk
  • + 8 more ingredients
    • ½ cup dry white wine
    • 2 bay leaves
    • 1 tsp chopped fresh thyme
    • 1 can (370 mL) evaporated milk
    • 1 lb fresh fish , chopped (such as whitefish, halibut, cod or lobster)
    • ¼ cup chopped fresh parsley
    • ¼ tsp salt
    • ¼ tsp pepper

Reserving juice, drain clams. Set aside. In Dutch oven, cook bacon, stirring occasionally, over medium heat until crisp, about 5 minutes. Drain all but 1 tbsp fat from pan.
