Mixed Seafood Ceviche Recipe

Ingredients

  • 1 pound shrimp, cleaned and poached
  • 1 pound raw octopus, thinly sliced
  • ½ pound cobia, thinly sliced
  • 1 cup corn kernels, blanched
  • ½ cup cilantro, chopped
  • 2 jalapeños, thinly sliced
  • 2 teaspoons black olives, chopped
  • + 4 more ingredients
    • ¼ cup lime juice
    • ¼ cup olive oil
    • kosher salt, to taste
    • 1 sweet potato
