Ingredients

  • 1 teaspoon salt
  • ½ cup bottled horseradish
  • ½ cup unsalted butter
  • ¾ teaspoon black pepper
  • 1 kitchen string
  • 1 tablespoon shallot
  • 2 tablespoons olive oil

    • 4 1- to 1 1/4-inch-thick salmon steaks (preferably wild)
    • 2 tablespoons fresh dill

Stir together butter, horseradish, dill, shallot, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a bowl with a rubber spatula until combined well.
