Grilled Salmon with Orzo Salad

Ingredients

  • 1/3 cup plus 1 tablespoon chopped fresh dill
  • 1 cucumber, peeled, halved, seeded, and cut into 1/2-inch dice
  • 4 plum tomatoes, cut into 1/2-inch dice
  • ½ pound orzo (about 1 cup)
  • 1/3 cup plus 1 tablespoon olive oil
  • 1 teaspoon salt
  • Grated zest of ½ lemon
  • + 3 more ingredients
    • 1 ½ pounds salmon fillet, about 1 inch thick, cut into 4 pieces
    • 2 tablespoons plus 1 teaspoon lemon juice
    • Fresh-ground black pepper
