Grilled Salmon with Orzo Salad
Ingredients
- 1 ½ pounds salmon fillet, about 1 inch thick, cut into 4 pieces
- 1 cucumber, peeled, halved, seeded, and cut into 1/2-inch dice
- 2 tablespoons plus 1 teaspoon lemon juice
- 1/3 cup plus 1 tablespoon chopped fresh dill
- 4 plum tomatoes, cut into 1/2-inch dice
- Fresh-ground black pepper
- ½ pound orzo (about 1 cup)
