Grilled Scallops over Mixed-Green and Herb Salad

Ingredients

  • ¾ teaspoon salt
  • ½ teaspoon fresh-ground black pepper
  • ¾ cup loosely packed flat-leaf parsley leaves
  • 4 teaspoons sherry vinegar or red- or white-wine vinegar
  • ½ cup loosely packed mint leaves
  • 1 pound sea scallops
  • 1 tablespoon plus 1/2 cup olive oil
  • + 4 more ingredients
    • ¾ cup loosely packed basil leaves, torn in half
    • ½ pound mixed salad greens (about 4 quarts)
    • 4 teaspoons drained capers
    • ¼ cup chopped fresh chives or scallion tops
